We are pleased to bring in a coffee from the Café Sierra Azul Cooperative in Chiapas, Mexico. Café Sierra Azul was founded in 2010 and includes more than 200 small-scale coffee growers residing in El Triunfo Biosphere Reserve in the south of Mexico. Most of the local population makes a living out of agriculture (corn, beans and coffee) and cattle. However, coffee is the economic base of the region. Members come from 14 different communities and each has their own nursery (or one shared with their neighbors). Each member also processes and dries their own coffee. The members are dedicated to environmental protection as well as producing high-quality coffees organically.
The organization helps the community stay together and empower itself through social and educational projects. Many young members of the cooperative earned enough money to start these farms by working in the United States (often times illegally). This has historically led to the separation of a lot of families. By establishing the cooperative, they can foster a more stable economic environment that can reduce and prevent the need for this type of working situation, thus allowing families to stay and grow together.
The area that the cooperative is in is also an important ecological area. The El Triunfo Biosphere Reserve protects 10 of the 19 types of vegetation reported for the State of Chiapas - including two of the most endangered ecosystems in Mexico: the cloud forest and the rainforest. This area is an incredibly important migratory location for birds, as well as the bio-diverse home to many flora and fauna.

When tasting this coffee, we remarked on its clean, mild, and soft notes. The cup showcased flavors of cocoa, praline, honey, and light citrus paired with a juicy, round body. We love how simple, balanced and delicious this coffee is!
