This is the third of four coffees that we sourced on our trip to Honduras last Winter.  We had the chance to visit COMSA (Café Orgánico Marcala S.A.) on that trip and were blown away by not only the quality of the coffees on the table, but the philosophy behind its entire operations.
 
COMSA began in 2001 with a big vision of restoring the soil and earth to wholeness through a regenerative process of intentional healing.  They began by organizing a coalition of growers, social workers, and scientists focusing on research, environmentally progressive agricultural practices, local education and other reforms. Since then, they have made some major headway toward these goals!
Two of the most impressive examples of this progress are (1) Finca Biodinámica La Fortaleza and (2) the COMSA school.
 
Finca Biodinámica La Fortaleza is a coffee farm dedicated to research on the development of an organic coffee production system that is in complete harmony with nature.  The farm exists to be a source of knowledge, inspiration and other resources (such as organic inputs) for the cooperative's members' farms. It cultivates various varieties of fungus designed for varying soil types, runs a living compost program and hosts visiting scientists and others in its on-farm residential quarters.  It also operates its own recycling plant on the farm which serves the local area!  The COMSA school focuses on preparing the younger generation to become great stewards of the land and valuable contributors to their local and global community.
In all of these projects, COMSA is focused on changing hearts and minds.  And it is this holistic philosophy (which goes WAY, WAY beyond the requirements of organic certification) combined with stellar cup quality that really make us proud to offer this unique, natural-process offering! 

Look for flavors of strawberry jam, roasted hazelnut and hot chocolate supported by a rich, silky body and a pleasantly mellow acidity.  

 

This coffee is Fair Trade Certified and Certified Organic.

All coffees are available in whole bean only. 

We roast and ship on Mondays and Thursdays.  Orders placed Thursday through Sunday at midnight will roast and ship on Monday.  Orders placed Monday through Wednesday at midnight will roast and ship on Thursday.
