We are very excited to offer a new microlot selection from Guatemala! This coffee comes from ASPROCDEGUA, an organization that we have been purchasing from since 2018. In previous years, we have featured various lots as components in some of our blends (as well as single origin offerings). Needless to say, we have continually been impressed with these coffees. The group consists of 664 contributing members, 394 of whom have organic certification. Most of the producers have about 2 hectares on which they farm. Our importing partner, Cafe imports, cups through hundreds of coffees from the group to make its purchases, and the farmers whose coffees stand out on the cupping table are paid a premium. Those coffees are then offered as microlots. These microlots represent the pinnacle of quality from the group!
This is one such selection by Francisco Lorenzo Pablo. He owns a 4.43-hectare farm called El Chalum, where he grows Caturra, Pacamara, and Bourbon varieties. This particular lot contains only Bourbon and Caturra varieties. Once the coffee is picked while ripe, it is de-pulped the same day and then fermented for 18–28 hours. It is then washed three times and laid on patios to dry for 3–4 days.
In looking through various microlot selections from the group, Francisco Lorenzo Pablo had a few separate selections. Because of this evident quality, it is clear that he puts a lot of intention and care into the coffee he produces!
