This is our third year now working with this cooperative. Each year, we've been so intrigued by such a clean, sweet and complex offering from Papua New Guinea. The Keto Tapasi Progress Association was founded in 2008 and consists of about 375 members who come from diverse cultural and linguistic backgrounds. They collaborate to produce the consistently great lots we cup each year. The have been Fair Trade Certified since 2011 and Certified Organic since 2014.
Most of the farms in this association are small, and are actually called coffee "gardens": no formal names and no real boundaries exist between one owner's property and their neighbor's. Many members are also sustenance farmers. Upon harvest, the cherry is depulped, then fermented dry for one to three days. Then, it is washed and laid to dry for 3-4 more days. Parchment is then delivered to the central mill where it is sorted for quality. This attention to detail yields great results in the cup.
In the cup, expect a creamy body with citrus and caramel aromatics and pear, toffee, cocoa, molasses and pine nut flavors. This coffee is complex and very balanced!
We roast and ship Monday through Thursday. Orders placed by midnight will be roasted and shipped the next roast day. Orders placed Thursdays or later will be rolled to the next Monday.
