Our newest offering comes to us from the Las Lajas Micromill, owned by Oscar and Francisca Chacon and located in the Central Valley growing region.  The story of the mill is a testament to the sharing of knowledge and willingness to take necessary risks.  In 2008, an earthquake prevented the mill from having access to water for several weeks.  Oscar had heard about the pulped naturals and natural-processed coffees coming out of Ethiopia and Brazil. Without access to water during the harvest, he decided to take a chance and experiment with these methods (washed process was the standard processing method in Costa Rica).  At around the same time the founder of our local coffee importer, Cafe Imports, visited the area and was impressed by the quality of the coffee and became one of the first to purchase coffee with this new (for Costa Rica) processing. Their decision to take that risk has since changed the landscape of specialty coffee in Costa Rica, encouraging more of the surrounding farmers and mills to embrace new and innovative ways to process coffee.

Many of the guiding principles of Las Lajas are rooted in their concerns of environmental impact, mitigating water usage by doing natural and honey processed coffees, and planting shade trees to help against excessive heat from climate change. This particular offering from Las Lajas comes from the Calle Liles Farm and was processed as a yellow honey coffee.  This means that the coffee is dried with the fruit, called mucilage, left on the seed and the coffee is turned hourly.  As the fruit dries it changes the flavor characteristics of the coffee seeds, adding a more dense fruit sweetness. Look for flavors of grape hard candy, cranberry sauce, and peanut brittle with a big, juicy, almost wine-like body. We are very excited about sharing this coffee with you and hope you enjoy it as much as we do!

All coffees are available in whole bean only.
