It has been a while since we have sourced a coffee from Sumatra as an offering, and we are really excited to bring this one on the menu. This coffee comes from the GARMINDO Cooperative, short for Gayo Arabica Mahkota Indonesia Cooperative. The co-op was started in 2019 and is fairly large, with 625 members, most of whom are smallholder farms with less than 1.5 hectares. The founder, Sakdan, also owns and operates the Bergandal Farm and Mill. Their family has been a long standing name in the coffee industry in the region and they have been supporters of their fellow farmers. This lot comes from from a producer subgroup in the cooperative comprised of all women.
The coffee is brought, in cherry form, to a collection point where it is de-pulped, fermented underwater for 12 hours, and given a pre-dry before undergoing the wet-hulling process. Afterwards, the coffee is dried on patios, which typically takes 2–3 days under sunny conditions (but can take up to 7 days when the weather is rainy and humid). This process helps lead to the depth and complexity this coffee has. When we tasted this coffee, we noted how it was sweet, tart and a little spicy with notes of brown sugar, tart cider, and rosemary accompanied with a crisp and juicy body. We think this is a fun coffee to start the day with!
This coffee is Fair Trade Certified and Certified Organic.
