This is the second year now that we have offered a coffee from COOPAC, a Fair Trade Certified cooperative near Lake Kivu. The coop is comprised of about 8,000 members contributing to 50 washing stations.
COOPAC is committed to environmental and social sustainability in addition to producing high-quality coffee. Waste by-products from processing are used as fertilizer rather than discarded into the lake (as is common practice), and shade trees are distributed to farmers to prevent soil erosion. COOPAC has assisted in the construction of a school, health-care clinics, roads and bridges in the community. The cooperative also has a program to distribute cows and goats to the most productive farmers and makes available the services of an agricultural advisor to teach the latest production methods. This year, we have an offering from the Kigeyo Washing Station (you may remember last year's was from the Kabirizi Washing Station). Producers deliver ripe cherries to the washing station and they are depulped the same day. Coffee is fermented dry for 12 hours, then underwater in fermentation tanks for 24 hours. This is followed by multiple washings to remove the mucilage. The beans are first dried in mechanical dryers and then on raised beds for 2–3 weeks.
Look for a tart and sweet cup with dense sugars and caramel depth. It offers cherry, melon and raisin flavors with a background of cocoa. Delicious!

We roast and ship Monday through Thursday. Orders placed by midnight will be roasted and shipped the next roast day. Orders placed Thursdays or later will be rolled to the next Monday.
