The CAFESCOR Association was founded in 2014 by a group of 25 partners in the Lempira department in Honduras. The group's goals are to produce and market coffee with strict quality control, to promote clean and sustainable agriculture, and to make a better life for its partners. CAFESCOR stands for Cafés Especiales Corquin (Corquin being a neighboring department). Through their continued efforts, the group has since grown to just over 400 smallholder farmers in the western side of Honduras, and continues to be a leader in the production of certified coffees. CAFESCOR is also dedicated to ending child labor, educating members about child welfare, and supporting programs that offer recreation and education for children.
The mountainous land where the coffee is grown shares its border with the Chalatenango region of El Salvador. Our importer, Cafe Imports, tends to find their highest scoring coffees from El Salvador near this area - partially thanks to its rich, loamy soil. The producers practice selective harvesting, picking only the ripest cherries by hand, and delivering them to CAFESCOR's wet mill. Here the coffee is sorted and prepped for washing. The coffee cherries are soaked for 15-18 hours to soften the fruit before the seeds are washed. Once washed, the coffee is dried on patios for 10-15 days, using mechanical dryers when needed.
When we taste this coffee, we note its flavors of milk chocolate, fig bar, and lemongrass coupled with a fairly heavy body and soft acidity. The cup is sweet, mild and sure to be a crowd pleaser.
