We at Bootstrap believe that coffee drinkers should not have to lower expectations of cup quality when looking for options to limit their caffeine intake. When bringing a new decaffeinated option on we treat it the same as any other coffee. With that, we look for options in the the supply chain that treat the coffee with a similar viewpoint.
The Peru Lima falls perfectly in line with that sentiment. This coffee comes to us from the Lima Coffee exporting organization, a relatively new but rising star in the specialty coffee coming out of Peru. The President of Lima Coffees, Rony Lavan, is a quality driven coffee professional that has been helping push and develop higher cup scores from smaller producers that work with them. In 2017 he even won the Cup of Excellence in Peru! Lima Coffees, in conjunction with Cafe imports, our importer partner with this coffee, selected this lot to be decaffeinated by water process in Mexico through the company Descamex. Although all coffee changes many hands, decaffeinated coffee has even more stops in its journey from the seed to the cup, making it all the more special for us when we find a great tasting decaf offering like this. When we first tasted this coffee on the cupping table we found flavors of cocoa, toasted almond, and orange cream, with a mellow acidity and a lightly creamy body. This Peru Lima tastes so nice that it’s easy to forget that you’re drinking decaf!
