We are very excited to bring back another offering from the SOPACDI organization out of the Democratic Republic of Congo. Located near Lake Kivu, SOPACDI is a coffee growing cooperative that was started by former producer Joachim Munganga. Since it started in 2002, SOPACDI has grown to be more than 5,600 producers strong, around 20% of which are women. SOPACDI is the first coffee cooperative to be both Fair Trade Certified and Certified Organic in the Democratic Republic of Congo. Throughout the organization there are 10 micro-washing areas to which producers can bring their cherries to get processed. This particular lot comes from the washing station in the Karango Village, where 89 farms supply cherries. It is double fermented; cherry is first depulped and fermented dry before being fermented underwater (after the washing and grading has been done). The coffee is then dried on raised beds with shade covers made of net. All of this attention to detail leads to the depth and vibrancy that we find in the cup.
