The Aguilera Family is a family of 12 siblings who are second-generation producers. Their father was a pioneer; he first cultivated coffee in that area (and now the area is rich in coffee production--many others followed suit). Most of the siblings own farms, and together they manage a micromill that they installed shortly after winning the 2007 Cup of Excellence. Before they started operating the mill, they sold their coffee to the local co-operative and had no real connection to roasters. The mill brought them many connections with roasters and importers, which is really valuable. They are able to glean valuable feedback which enables them to continually improve their processes every year! They are super-focused on quality at every step!
In the cup, look for toffee, lavender, milk chocolate and almond with a crisp, apple acidity. It's silky and complex!
All coffees are available in whole bean only.
We roast and ship Monday through Thursday. Orders placed by midnight will be roasted and shipped the next roast day. Orders placed Thursdays or later will be rolled to the next Monday.
