When working with our friends at Cafe Imports, we cupped a few coffees from Colombia. One coffee on the table stood out to us from the ASOSPAC Association (Asociación de Productores Agropecuarios y Comercializadores de Santiago Perez). The group is a relatively new one, founded in 2017 with 29 farmer members. Since then they have grown to nearly 45 participating farmer members. The most of the producers are from the township of Santiago Perez, as well as other nearby villages in southern Tolima. Sitting at around 1900 meters above sea level, these farms grow a majority of the Caturra variety, a variety that is often used as a benchmark to compare new cultivars that are being tested.
When first tasting this coffee, we noted that this coffee had a ton of sweetness with flavors of grape, strawberry, and pear. The body was nice and buttery, but finished crisp and clean. We think this is a great example of classic flavors often found in coffees from Colombia, especially this region.
